Maybe it is because I am a native Texan, but one of the things I’ve missed the most since going gluten and mostly corn free is tortillas.
I mean, I LOVE TACOS! Am I right?
These plantain tortillas are so easy to make and, excluding the plantains, you probably have all the ingredients sitting in your pantry.
HEALTH TIP! Plantains are high in starch so you don’t want to eat these every day. Ok, you may want to eat them every day, but you shouldn’t. Save them for days when you are working out or otherwise expending a lot of energy.

- 1 large plantain (approximately 1 lb) A note on plantains: Green plantains are more savory and what I like to use for this recipe. As they ripen they turn yellow and become sweeter.
- 1/4 cup olive oil
- 1/4 cup water (filtered is best!)
- Salt to taste. NOT white table salt. You know I love this pink Himalayan salt, but sea salt will work as well.
Step One: Heat the oven to 400 degrees Fahrenheit and line two cookie sheets with parchment paper.
Step Two: Put all the ingredients into a blender. Add a pinch of salt, you can add more later. Listen up: Plantains don’t peel like bananas. You will need to use a knife.
Step Three: Blend the ingredients together until they are smooth. No lumps!
Step Four: Taste the batter. Does it need more salt? If so add more salt and repeat step three.
Step Five: Scoop out the batter onto the cookie sheets. I use the 1/4 measuring cup I have already used for the oil and water. One less dirty dish and it keeps the size consistent. This usually makes 7-9 tortillas.
Step Six: Use the back of a spoon or spatula to gently spread the batter into a round tortilla shape. I make them as thin as I can get them. Try to make the center as thin as the edges. Otherwise you will end up with burnt edges and a raw mushy center.
Step Seven: Bake for 10-13 minutes. They should be brown around the edges, but not soft in the center.
Step Eight: If you aren’t going to wash the blender right away, soak it in water! You will thank me later.
